Daryaganj Hospitality, founded in tribute to Raghav Jaggi’s grandfather, Kundan Lal Jaggi—one of the creators of iconic dishes like butter chicken and dal makhani—has rapidly evolved into a flourishing brand with 15 outlets and an international foray in Bangkok. In an exclusive interview with FE, Amit Bagga, co-founder and CEO, reflects on the journey of blending culinary heritage with modern dining.
Daryaganj aims to bridge the gap between roadside dhabas and luxury restaurants, offering authentic North Indian cuisine with fresh, quality ingredients. Raghav’s grandfather played a critical role in popularizing these dishes, making them international ambassadors of Indian cuisine when the original Delhi restaurant attracted dignitaries from around the world.
The partnership between Raghav and Amit, friends since childhood, revitalized this family legacy in 2017. Guided by Kundan Lal Jaggi’s recipes and philosophies, they focus on delivering consistency across outlets via a central kitchen and daily quality tastings.
“Our growth, even amid challenges like COVID-19, hinges on customer experience,” Amit emphasizes. By engaging all five senses—from food and music to packaging that enhances the delivery experience—trust and loyalty have flourished.
Bangkok was selected for its logistical ease and its status as a top tourist destination, with many visitors from India. The next expansion targets Dubai, while India’s focus remains on major metro cities.
Amid a legal dispute concerning their claim as ‘inventors’ of butter chicken, Amit maintains respect for the judicial process, ensuring that Daryaganj’s core commitment to authentic, quality food remains uncompromised. The recent boost in visibility from Shark Tank India has spurred franchising opportunities, further solidifying Daryaganj’s position in modern Indian dining.
